The Spanish BBQ

When the weather is good, there's nothing like having a barbecue and outdoor dining, everything seems to taste better and outdoor cooking is a real pleasure.
Unlike the UK however, Andalucia basks in more than 3,000 hours of sunshine a year which means that cooking on the barbecue, alone for yourself or for family and friends, is almost a daily occurrence.
In fact, during the summer months, many people rarely cook at home and broad outdoor summer kitchen Free is a feature of many gardens and patios.

A barbecue cooking times conjures up images of hamburgers and hot dogs that are black on the outside and raw in the middle, but need not be the case at all. Here in Andalusia, the people have a passion for outdoor living, healthy eating and social events for the food of the Andalusian BBQ is always fresh, exciting and varied. Almost anything can be cooked outdoors and in the Andalusian style family and friends gather to prepare a variety of dishes rich in color and flavor to create a perfect atmosphere every time.
This does not mean, however, you have to spend on expensive ingredients, but quite the opposite in fact. The people here are experts to create delicious dishes using fresh local produce for little money.

roast chicken is a favorite and is much cheaper to buy a whole chicken and get your butcher together for you that is what the locals here usually do. A typical way to barbecue chicken here is once you have all cuts separately, the pieces marinated in lemon juice, olive oil, garlic and thyme for a couple of hours. The marinade, and produce a pleasant taste, helps maintain moisture meat during cooking and keeps the small cuts that needed almost no time outdoors and avoiding the burn centers in the rough.

Another marinades are popular for meat and honey mustard and lemon or orange. However, there is nothing like a pig or lamb chop or sausages and undercooked hamburgers made on the barbecue. Chops cutting are generally very thin in Andalusia which means quick cooking and things do not burn. A favorite form of BBQ sausages is to roll up and then directly through the skewer with a sprig of rosemary or thyme natural sausage skewers.

Being close to the coast, fish is obviously a plate of BBQ quick favorite and everything from sardines or prawns seared fresh tuna steaks are cooked on the barbecue. Tuna stuffed with mint, wrapped in a beautiful gift, but my favorite by far has to be gambas al pil-pil and Spanish paella either seafood or rabbit and chicken varieties can be cooked on the barbecue.

But baking did not have to mean meat or fish with a salad, many vegetable dishes can be prepared the same and meat dishes. baked potatoes are lovely cooked in the coals of the grill and if you put a little olive oil, thyme and garlic in the kitchen before they are simply delicious. Skewer vegetables are also a clear favorite and if you have any pots or you can do mushrooms, garlic in olive oil that are prepared in a manner similar to prawn pil-pil. A typical vegetable dish on the special meal Summer is "grilled vegetables, which is tomato, red peppers and onions that are cooked on the barbecue grill until soft in the middle. No matter if the fur are a little black as it all adds to the flavor and the skin is discarded anyway. Once cooked and peeled, cut, mix them together, add a little salt and a drizzle of olive oil and that it. The beauty of this dish is that it can be eaten hot or cold so you can prepare in advance if you wish.
